2014-11-09 Drying pumpkins !

Very time consuming, but I cant waste anything….we have still some pumpkin  left and the freezer is bursting !

So using the internet I researched how to dry pumpkin….and came up with my own version !

First cube your pumpkin….there's 1 hour gone and a lot of puff Surprised smile)

Get it crammed into a saucepan !

I did put a very small amount of water in as I was scared it would stick, bring the whole lot to the boil….(days) and then blend with stick blender or potato masher if your a masochist !!

Reduce this as much as possible (lid off gentle boil )….still more days….Then when it starts to “bloop” so that it escapes over the edge and scolds you if you get in the way, then it is ready to transfer on to some greaseproof paper on flat metal sheets of some kind, leave to dry……..here i have them on the wood burner, but you could use the oven set on low, or a proper drier if you have one ! this takes MORE days………

Finally you will have a rather thin sheet of dried pumpkin which is quite like fruit leather in texture whilst hot……….

When it cools down you can snap it into pieces to store in an airtight jar…..to use in soups/curry/stew ….I also whizzed up some pieces to make powder for adding to soups etc

And in case you are wondering how mad this all is……..a 9kg pumpkin produced 450g of dried flakes……….ok i did eat a few bits BUT !!!!!
